Homemade Almond Milk Creamer

This sounds sooooo intimidating but I swear it's not. 3 ingredients, 4 if you count the water you'll use, and it's better than any of the overpriced non-dairy creamer alternatives in the milk aisle. Plus if you buy your Almonds from Costco, it's a fraction of the cost.

It's creamy, thick and reminds me of using Heavy Whipping Cream (which lets be honest is delicious), but it's not high fat, not dairy, and Whole 30 and Paleo friendly if that's your jam. Plus it's super easy to make.
I first started making my own Almond Milk Creamer when I got annoyed at spending $4-5 for a tiny little carton that I blew through in a few days. I'm not a heavy creamer person, but after my third pregnancy I definitely require more creamer in my coffee. Could be from the coffee aversion I had for the first 25 weeks, but now I drink my coffee a bit more "beige." Weird, I know.
Anyway, for $3, you can buy a "Nut Milk Bag" on Amazon and make your own. If you have a high speed blender, you're in business.
I soak the almonds overnight in the fridge for 24 hours and throw in 2 pitted, Medjool Dates. Also bought in bulk from Costco. Tip: Keep in the fridge unless you go through dates like crazy, which we don't really!
Then, I blend them on high in the blender with 4 cups of water, my dates, a bit of salt and cinnamon.

Next, I strain it. See below my extremely fancy setup ;). Here I literally dump it into the bag and forget about it for a while while it seeps through the bag.

Throw it into a large mason jar and you have coffee creamer for the next week :). Enjoy!
